French toast (‘eggy bread’)


  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon low fat oil
  • Sprinkle of cheese (optional) or cinnamon or cinnamon sugar (see cinnamon toast).


Beat the egg with milk in the shallow dish. Place a slice of bread in the egg mixture, making sure that the side in the egg is completely coated. Turn the bread over and leave for at least 5 minutes or until most or all the egg has soaked into the bread. Prick the bread with a fork several times to allowmore of the egg to be soaked up.

Heat a little fat or oil in a frying pan and over a medium heat, cook the bread slice on both sides until browned. Serve immediately alone or with a sprinkle of cheese or cinnamon or cinnamon sugar.


This makes a tasty and nutritious breakfast or light lunch or supper, particularly for someone with a small appetite.
