Overview:

A sandwich makes a quick and easy meal and can be just as nutritious as a cooked meal. Eating more sandwiches can be a good way to overcome a poor appetite. By adding extra butter , margarine or mayonnaise to your sandwich you can give yourself a high-calorie boost to put on weight. On the other hand, you can make your sandwich high in fibre and low in fat to help you lose weight or just to help you eat more healthily.

If you make your own bread, try reducing the amount of salt you add. You will probably find that you can cut the salt added in a standard recipe by as much as half to make a loaf that tastes just as good. Adding flavourings such as cinnamon, dried or fresh herbs, garlic and onion are a good way to add taste and variety to your homemade bread.

Tasty sandwich fillings

For variety, try some of these ideas and combinations.

Beef and mustard
Thick slices of bread from a crusty white loaf, spread with English mustard and filled with cold roast beef.

Chicken and mango
Cold, shredded roast chicken with 1 teaspoon of mango chutney in wholemeal pitta.

Cottage cheese and peach on an English Muffin
Toast and split an English muffin. Spread each side with a tablespoon of cottage cheese and top with slices of tinned peach. Sprinkle with a pinch of cinnamon and a teaspoon of brown sugar and place under a hot grill until the sugar bubbles.

Houmous bagel
Houmous and a little grated carrot in a toasted bagel.

Lamb and mint
Spread the roll or bread with mint sauce and fill with cold roast lamb.

Mexican Chicken mix
Cold diced roast chicken, mixed with sour cream or mayonnaise, a little diced red pepper and a few drops of Tabasco sauce.

Tuna mix
Tinned tuna (preferably in spring water), mixed with mayonnaise and a small pickled cucumber, finely chopped, served on a good granary roll.

Tuna and mustard
Tinned tuna (preferably in spring water), mixed with a little olive oil and whole grain mustard to taste.

Turkey and cranberry sauce (Thanksgiving tortilla)
Cranberry sauce is low in potassium. Try in thickly sliced wholemeal bread or spread the cranberry sauce on a warmed tortilla wrap, add some shredded cold roast turkey and some crispy lettuce, and roll up.
